A Somewhat Low Fat Carrot Cake

I made my first carrot cake last week and was happy with the results!


You need:

1/4 cup canola oil
3/4 cup applesauce
1/2 cup skim milk
1 1/2 cups sugar
3/4 cup egg substitute
2 cups flour
4 teaspoons baking soda
2 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves (I actually didn't have this on hand so I skipped it...)
1 1/2 teaspoons vanilla
2 cups shredded carrot
8 ounces crushed pineapple, undrained
1/2 cup chopped walnuts (optional)
1/2 cup raisins (optional)

Here is what you do:


350 degrees, 9x13, greased
Beat together oil, applesauce, milk, sugar, and egg substitute.
In another bowl, stir together flour, baking soda, cinnamon, nutmeg, and cloves.
Combine bowls, beat, and mix in the vanilla. Mix in carrots, walnuts, raisins, and pineapple.
Bake for 45-60 minutes.
