Breakfast Quesadilla

I made a delicious and easy dinner favorite kind of cooking! I've never used egg substitute before. Have I been living under a rock? It is so much healthier for from now on I'm using it as often as I can!

You need:

1 cup egg substitute
1/4 cup salsa
1/4 cup low fat cheddar cheese, shredded
8 tortillas

Scramble the egg substitute and stir in the salsa and cheese when it is almost set. Divide egg mixture among the tortillas. Grill the quesadillas for 3 minutes per side, or until golden brown. Cut into quarters.
